What is the Republic of Fremantle?

The Republic of Fremantle is a distinguished distillery born from a shared passion for gin and a deep appreciation for traditional distilling techniques. The founders, Jason Townes, Matt Giudice and John McVeigh, set out to create a range of gins from scratch, from “grape to glass”.

With meticulous attention to detail and an unwavering commitment to quality, the distillery handcrafts its gins in small batches, ensuring that each bottle receives the utmost care and attention. They source the finest botanicals, both locally and globally, to create a harmonious fusion of flavours that reflect the diverse landscapes of Western Australia.

From the moment you arrive, you’ll be met with warm hospitality and knowledgeable staff, ready to share their passion and expertise with every visitor.

Choose from a classic gin & tonic, cocktail, wine, or beer (non-alcoholic drinks are available too).

The small bar area has a timeless elegance or you can enjoy your drink outside in the sun.

Distillery Restaurant

This unique distillery space provides a different experience to enjoy local produce. The menu was designed by Head Chef Emily Jones, incorporating locally sourced meat and fish.

Republic of Fremantle Distillery Tour & Tasting

During my tour, I enjoyed delving deep into the rich history and intricate process behind their meticulously crafted gins. From the selection of the finest botanicals to the delicate art of distillation, each step of the journey was a testament to the distillery’s commitment to perfection.

As I listened to the passionate explanations, my appreciation for the gin-making process deepened, and I found myself enthralled by the sheer dedication that goes into every bottle.

But the tour was not limited to educational insights alone; it also offered an indulgent sensory experience. The tastes start with trying the locally grown and produced Verdelho wine which is the first step in the “grape to glass’ process. This wine is passed through the custom-built Müller copper still and transformed into a unique grape-based spirit.

Next was their award-winning vodka, which took out Best of Class at the American Distilling Institute Awards, meaning it’s the best vodka in the world! This double-distilled spirit is 42% ABV, perfect for appreciating the subtle flavours of the wine.

Next was the moment we were all waiting for, the chance to sample their unique gins. My senses were instantly awakened when I smelt the delightful aromas from the carefully curated botanicals. Not only did we get to taste their Aromatic Gin and Full-Bodied Gin, but we had the pleasure of trying the limited-release Navy Strength Gin (now sold out).

• It was over too quickly (the Gin School is longer – two hours where you make your own distilled gin)

The knowledgeable guide effortlessly transported us through a tasting extravaganza, where we savoured the complexities of their award-winning spirits, each sip leaving a lasting impression on my taste buds.

It was worth the money and we enjoyed every moment (and learnt so much in the process).
